What Does Elevage Mean?

As I began to learn and fall in love with wine some years ago, my dream was to someday make and share wine with family and friends. I recall visiting hundreds of tasting rooms and wine events over the years both here and abroad all the while thinking to myself that the feelings I have when I visit these places and drink fantastic wine is something I want to experience for the rest of my life and something I would like to share with others.       

After many years of saving, planning, Iearning and developing relationships with other winemakers and winery owners, it was time to follow the dream. It was certainly not without its ups and downs, but any dream and passion worth having is not without those challenges. Well, finally in 2015 Elevage Wines was born!

Making great wine, sharing It with you and creating a never before charted path for our family is what drives the passion behind Elevage Wines. Wine has most certainly shaped and changed my life. My hope is that our wine does that for you.

In 2018 we were blessed to bottle our first two wines, our 2016 Lineage Syrah and our 2018 Engagement Rose.

What Does Elevage Mean?

Elevage is the French term for the progression of wine between fermentation and bottling. Think of Elevage as a wine's adolescence or bringing up. The raw fermented juice is lovingly shaped and nurtured during this period, into its final form, through techniques such as barrel aging, filtering and fining. Good winemaking decisions during this time can help the juice achieve its fullest potential. We see this as a metaphor for the growth and love that we have seen in our family. We are happy to share that love through our wines with you.

2016  Lineage 

100% Syrah 

Paso Robles, California

Adelaida District - Glenrose Vineyard

$45 per bottle or $495 per case

The fruit for our flag ship wine, aptly named Lineage comes from a single block at Glenrose Vineyard’s very first Shiraz clone 7 planting from 1994. The Syrah grapes were harvested late in August 2016 during some very extreme heat. The extreme heat that year made for an early harvest, and the key to determining the time to pick the grapes was when the fruit was most balanced with acid and sugar. During the primary and secondary stages of fermentation, we could see that we had something very special. The wine was developing a very deep rich color, floral aroma and gentle complexity. Fermentation was managed with punch downs twice a day and three de la stage’s for silky and velvety tannins. The wine was transferred to two neutral Hungarian barrels two weeks later and aged over 23 months, before being bottled in August 2018. 

44 cases produced. 14.9% alcohol by volume.


2018 Engagement 

100% Grenache Rose

Paso Robles, California 

Estrella District 

$23 per bottle or $250 per case

The Grenache for our Engagement  Rose comes from Sea Shell Vineyards located in the Estrella District  of Paso Robles. The block for this fruit is located on a steep south west facing slope on the western side of the property. The soil is a mix of decomposed lime stone on the higher elevations transitioning to heavier loam content as the slope drops towards the Huer Huero Creek. The fruit was always intended to be grown for rose. The fruit was hand-picked at sunrise and delivered to the facility cold  where it was immediately whole-cluster pressed with minimal skin contact. The result is a lightly colored, bold flavored Rose.
